The bottle had been last opened a couple months or so ago.

Just sounds like air escaping to me.

it is just gas escaping the bottle.

Seems unlikely to me, since I don't believe that the Clostridium bacteria can survive in that sort of alcohol concentration. The hiss was either from gas escaping a relatively high-pressure container, or from gas being sucked into a container under vacuum or very low relative pressure. I don't know of any cooking wine being sealed under vacuum, but that doesn't mean much – there's a lot I don't know. on the other hand, I could see a container of cooking wine getting warmed up and generating a pretty high vapor pressure that would hiss when you opened it.
Still, the general rule when it comes to food is this: if you don't trust it, chuck it (if you can afford to). Buying new food is usually less expensive than paying for a hopital visit.

could be; could mean a long and painful death to all who eat your cooking from that meal.. dry heaves, hemmoraging…

it could also mean that the first time the bottle was opened, a little air stimulated further fermentation of the sugars still present in the wine, releasing gases….

The longer you leave it , the more alcohol, and then vinegar, you'll have.

cooking wine is nothing but cask dredges that may have more or less sugar than vintage..no surprise that it fizzes like soda pop.
